Best Cheesecake Ever

Meet Teresa, the best chef in Galicia! Yesterday, I had an early dinner in Teresa's and Manolo's cafe just up the road from my albergue in Salceda. I ordered lamb chops and was served 10 of the tenderest chops I have ever eaten. What followed was the most delicious cheesecake. Before I left Manolo insisted on showing me his beret, which had a kiwi pin on it. This morning I returned hoping to have cheesecake for breakfast!! I asked Manolo for croissant with butter and jam, no way he said, the croissants are perfect as is, and he was right. They were the lightest, fluffiest croissants. At breakfast I also met two ladies from the US. Talk about coincidences, one teaches religious studies to teachers, and the other had heart surgery last year. Later on we met up again and compared notes. Today it was a lovely gentle walk through the countryside, I even spied the equivalent of Matamata Tractor and Machinery Services. I am really enjoying this camino, taking my time and appreciating the quiet gentle lanes and forest in my own time.
